
It takes a Jersey boy to make real New Jersey pizza in Colorado
Okay…we admit it…we have been complaining about the food and, specifically, the lack of New Jersey style pizza, since making our move from New Jersey to Colorado. But I will say this…EUREKA…we found it!
The first time we were here visiting Colorado we wanted to experience real “Colorado pizza.” We fell upon the The Sink in Boulder, right across from the campus of the University of Colorado. It is a typical college town eatery and bar with just that kind of vibe. And we really liked it.

It was unique, just like Chicago style pizza that we get when we visit that other favorite city of ours.
But it wasn’t what we were used to, what we grew up with, as Native New Yorkers growing up in the New Jersey suburbs…the Pizza Capitol of the World.
We went to a number of places in our new hometown of Longmont and were repeatedly disappointed, until we found Rosalee’s Pizzeria. Rosalee’s has a great brick oven pie. We love their margherita pie mainly because their sauce is truly wonderful. It absolutely makes the pie.

But after some further disappointments of the local pizza establishments, we literally stumbled upon a place in Nederland after hiking the Hessie Trail.
Crosscut Pizza and Taphouse really does have a nice selection of specialty pies. They have a nice soft crust that is JUST crispy enough with a sweet sauce, but it’s the toppings that make the pie special. And that’s why they are good for specialty pies.

And although we have revisited all of those places, the places we have tried have left us homesick…for the pizza…not for New Jersey.
But then we found it…real NEW JERSEY PIZZA!
We were doing a tour of breweries in a quest for great root beer and, instead, our quest for great pizza was conquered.
GFL Pizza is a mobile pizzeria specializing in, what else, New Jersey style pizza. And unless you are FROM the New York/New Jersey metropolitan area, you won’t get it. But you CAN get it if you take a drive and find the GFL pizza truck.

Guy Luna is the New Jersey pizza maker extraordinaire. He says he is just a simple Sicilian “guy” from Garfield, New Jersey, but he knows his craft. He placed 25th out of 100 pizza chefs at the 2024 International Pizza Expo’s competition in the traditional category, and has been featured in Pizza Today Magazine.
